Bihari chicken, quick and simple north Indian style chicken recipe.

Bihari chicken 

Bihari chicken is a simple and quite delicious dish in our Indian region, where this dish is not only famous in Bihar but it has its fan following in enter utter Pradesh (up) state as well.


Ingredients-

1)      4-5 pieces of onions

2)      2 pieces of tomato

3)      2 pieces of potato (optional)

4)      Ginger garlic paste

5)      Khada masala (whole masala)

6)      Red dry chili pepper (Kashmiri mirchi)

7)      Ginger

8)      Garlic

9)      Coriander seeds




Let’s start with our chicken marination

1)              Take a bowl and add 500 grams of chicken (with bones or without bones totally depending on your portion and taste preference) a little bit of turmeric, some ginger garlic paste, salt, red chili powder (paprika powder), coriander powder, and a little bit of lime juice. Mix it well and keep it aside for about 10-15 min.

Now let’s start with our chicken base

2)      Take a mixer grinder and add 12-15 pieces of garlic and 7-8g of ginger some red dry chili, coriander seeds, long, elachi, and cardamon sticks by adding a little bit of water to make a thick paste (it should be in red color) if it does not try adding some more dry chili.



Now our final preparation

1)       For our chicken gravy we need onions to be finely Julian (slices can also make a significant impact) and tomatoes to be finely chopped. Green chilly fine piece.

2)      Take a saucepan add some mustard oil and add khada masala (1-bay leaf, 2-3 each cardamom pods, 1 dalchini stick, 1- star, little jeera) and sauté over a low flame, as soon as the fragrance is released add all the Julian onions and chop chilies, sauté them as well over the high flame.

3)      By at the time onions are half done add all the tomatoes and saute them as well.

4)      After our onions are 70 % done add all the marinated chicken and saute it for 2 min and cover the saucepan with a lid, check on the chicken gravy every 5 min ( it will take around 20 min to tendorious) 

1)      After 10 min of scouting the chicken its time for our homemade masala to enter the ring, all the masala and saute, (please do not add the water during salute, the onions will release the oil so it has less chance of burning)

2)      Add chili powder, coriander powder, garam masala, and salt ( as per taste), mix well then add 100ml of water to give a stem boil.

3)   Around 10 min our chicken will be ready to serve to garnish it with coriander and enjoy with your friends and family.
