Hi, foodies! In this post, I'm going to show you how to make one of my favorite dishes from Indian cuisine: baingan ka bharta. This is a tasty and easy dish that consists of roasted eggplant mashed with spices and herbs. It is usually eaten with roti, naan or rice, and can be enjoyed as a main course or a side dish my favourite part of this dish is with jeera Rice and yellow dal alongside with Beingon ka bharta.
. Here is how you can prepare baingan ka bharta at home in a few simple steps.
Ingredients:
- 1 large eggplant
- 2 tablespoons of oil
- 1 onion, finely chopped
- 2 tomatoes, finely chopped
- 2 green chilies, slit
- 1 teaspoon of ginger-garlic paste
- 1/4 teaspoon of turmeric powder
- 1/2 teaspoon of red chili powder
- 1/2 teaspoon of coriander powder
- 1/4 teaspoon of garam masala
- Salt to taste
- 2 tablespoons of chopped coriander leaves

Method
- Wash and dry the eggplant. Make some slits on the skin and rub some oil on it. Roast it over an open flame or in an oven until the skin is charred and the flesh is soft. Let it cool slightly and then peel off the skin and mash the pulp with a fork.
- Heat oil in a pan and add the onion. Fry until golden brown and then add the tomatoes, green chilies and ginger-garlic paste. Cook until the tomatoes are soft and mushy.
- Add the turmeric powder, red chili powder, coriander powder, garam masala and salt. Mix well and cook for a few minutes.
- Add the mashed eggplant and mix well. Cook for another 10 minutes on low flame, stirring occasionally.
- Garnish with chopped coriander leaves and serve hot with roti, naan or rice.
