Shahi tukda

shahi tukda 

          is a very famous sweet dessert in India, especially in Kolkata (west bengal) 

   it's a  Mughlai dessert, Shahi tukda is made with ghee-fried bread, sweetened milk, saffron, and nuts. Shahi is the Persian word for royal, while tukda can be either Hindi or Urdu. Therefore, Shahi tukda literally means royal sweets.

ingredients required to make shahi tukda 

white bread or brown bread 
Pure ghee
milk 
safron
sugar
Almond
Cashew nuts
Rabdi ( condense milk)
Pista

preparation 

     first, to start making our delicious dessert we need to make rabri to make rabri we need to boil the milk for at least more than 30 minutes. as we start boiling milk add some saffron to enhance the color and smell of the dish. 

on the other hand mix sugar with water as we are making sugar syrup, sugar syrup is the important element in our dessert, by adding two to three cups of sugar and 2 glass of water giving it a quick boil we can make sugar syru. (to check sugar syrup apply some syrup into your fingers like pinching it, if your fingers are sticking that means it's done)

   as our milk is transforming into rabdi meanwhile start making the base of the sweet 
cut the slices of bread into cubic shape or triangular shape as you like and then deep fry it over the oil or desi ghee.
as our bread is golden brown dip it into the sugar syrup for sweetness

don't dip your bread for too long as bread can get soft and we won't find the crunchiness of shahi tukda, place aside your bread pieces in a tray or a plate
as we are done mixing our fried bread with sugar syrup, now gently pour the rabri over the top of each piece,
  garnish it with dice almonds or other dry fruits or nuts
